Typical for Bamberg is the savoy cabbage. It is mainly pureed and served with meat dishes and in combination with dumplings. In addition, depending on the season, Sauerkraut is sold in barrels, local honey or asparagus.
The potato variety Bamberger Hörnla, a rather small and pointed potato, which is firm and has a nutty aroma, is considered a valued speciality. Its unique characteristics make it ideal for potato salads. Since Hörnla cannot be picked by machine, it is a very high-quality potato variety that is rarely found on menus. They are therefore rather offered in delicatessens.
